this weekend has been very rainy out here, and when it is rainy out I just love to make meals like enchiladas, pasta or this time I was sooo feeling like making burritos with my boyfriend (who is, oh what a coincidence, Mexican :)).
We eat lots of mexican food, from nachos with melted cheddar cheese on top, pico de gallo, to enchiladas..anything that’s tasty: we eat it all :-)
I usually buy organic meat. I do not eat that much meat anyway but I am totally against meat that is nonperishable/lasts for days.
When you buy „fresh“ meat in the supermarket and it labels that it is fresh for lets say 5 more days or even longer, that’s when you have to react: Put it back, don’t buy it :-)
They put a gas mixture with high levels of oxygen (O2) in the meat. High O2 packaging is used in Western Europe, the USA and Australia. The main benefit of O2 packaging is an improved colour stability (very red) compared to in-store wrapping, but this method has quite a lot quality and safety disadvantages.
Now you’d say, us consumers need to watch the dates on the meat packages and use that in our buying decisions.
Right, but normally when you buy beef, you should cook it on that exact same day.
I wonder how it is possible to wait 5 more days without the meat getting old. Normally the color of meat gets darker and browner, but with the gas mixture they put in it, heyyy, it looks fresh and red for days, but trust me, it isn’t.
Behind the freshness are lurking many germs that can make you sick!
It does not have to happen, but tests showed how many germs where in such meat. It’s disgusting, but we cannot even see it.
They are making us think that the red meat we are considering purchasing is fresher than it truly is…That is the sole purpose of carbon monoxide packaging.
What I can suggest you is:
Buy your meat local if possible. Organic beef is always the better choice, and it is becoming more and more available, so please consider that alternative and you’re good (and living healthier).
We as consumers have a right to know what has been done to our food. We have to let the retailers know what we want, if we do not tell them, nothing will change.
Trust me, buy great meat and you can enjoy your meals even more. Before I knew about that „fake fresh“ meat, I ate it and had tummy aches a lot…that is not the case with fresh meat anymore.
Another reason to tell the fake fresh meat good bye :-)
OK but now back to my beef burrito recipe. This site is also about health so, excuse my lesson :-)

- Prep Time 5-8 minutes
- Cook Time15 minutes
- Difficulty Easy
- 400-500g (14-17 ounces) ground beef
- 3 peppers, red, yellow and green or the ones you wish
- 250g (8 ounces) cocktail tomatoes, halved
- 1 package taco or burrito seasoning mix (follow instructions on water)
- salt and pepper to taste
- 1 package sour cream
- 8 corn tortillas (or more)
- 250g (8 ounces) grated cheese for filling the burrito
1. Start off by browning your meat in a large skillet.
2. Then pour in the seasoning mix and the amount of water (see on seasoning mix package), stir together.
3. Now throw in some salt and pepper to taste (not too much because we already have the seasoning mix). If you like it hotter, you can also add chili etc.
4. Let the meat burrito sauce simmer while you cut peppers. Throw these in right after you are done, peppers always need a little bit more time to get soft (if you like them hard, do not cook them that long, it is just my preference to cook it longer).
5. Now half your (washed) tomatoes and throw them in the yummy beef and pepper mixture.
6. Prepare your tortillas, either heat them up in your oven or do it like I do, heat them up for like 10-20 seconds in the microwave.
To keep them warm, put a tablecloth on top of the hot tortillas.
7. get your sour cream and grated cheese ready and them you can start making your burrito.
Note: This is a simple recipe with less ingredients for times when you want to get it done faster. You can also add salad, onions, any type of vegetable you prefer to your burrito.

You should try it out, it is such a great meal, you want to eat more and more…although you’re already full :-)
