Spring time has come, everyone starts to feel like having “fresh” foods, fresh salads, so why not showing you all a great recipe for this DELICIOUS pico de gallo salad you have with nachos or main courses???
We eat it all the time, it is such a great side dish, but mostly we eat it while having quesadillas or burritos, enchiladas or simply just nachos…
Basically anything mexican or soul-food like, it is a perfect match.
Or how mexicans would describe this wonderful salad:
Pico de gallo es una ensaladita sensilla y deliciosa. Se puede comer con quezadillas, tostadas o como usted le guste aqui la creatividad no conose limites.
Here’s the recipe for “pico de gallo” – and a couple of HOW-TO photos:
- Prep Time 5 minutes
- Cook Time 5 minutes
- Difficulty Easy
- 2 onions
- 6-10 cherry tomatoes
- Jalapeno peppers
- 2-3 limes (juice)
- salt and pepper
1. Chop the tomatoes and onions like on the pictures below.
Chop jalapenos, depends on how hot you like it, chop one at a time, mix it in the salsa, taste it, then decide to put in more jalapenos :-)
3. Now chop up the bunch of fresh cilantro.
4. In a bowl, mix all chopped ingredients together. Now you can add salt and pepper, taste it, then add more if necessary. It is better to add only a bit at a time, because once there is too much salt in it, you can never go back :-)
5. Now squeeze in the lime juice. Taste it (again and again..), maybe add more salt or pepper, and you’re done! You’re having a wonderful, fresh tasting ensaladita to your main course or just with nachos. Tastes SO good, trust me!!
And this is the absolute YUMMIEST combo when I crave for soul-food: CHEESY burrito, chilli and of course, pico de gallo.
