Mexican “Piñata” themed…Cake Bites!

Hello there, wishing you all a happy Friday!!

The next 3-4 posts will be full of color, full of fun and full of sweet taste, I promise :-)
This week has been sooo busy, but it was so worth it!
Yesterday was my boyfriends birthday and since he is mexican and because he misses his country so much, I decided to get a little bit of Mexico to our place!
Our dearest friends Kris and Jeff helped me out with everything, we planned to give Diego a piñata for his birthday. He has not been doing that for over 15 years so we thought it would be much fun for him to go “back”.
I just loooved the piñata we got for him, the colors were awesome, so bright and colorful, I immediately knew what kind of sweet treats I’m going to bake for him. And in which colors.

So this week I was busy in my niner kitchen making:
– Cake Bites
– Cake Pops
– aaaand Cupcakes (of course…can’t have a party without them!)

…Everything in the same color scheme as the piñata. Believe me it was a hit.
Not just the taste but to look at all these sweet treats made everyone hungry and so happy. You just have to smile when you see things like that. Not just when you’re a child ;-)

This is the piñata by the way:

I’m starting off with the Cake Bites for you all.

  • Prep Time 20 minutes
  • Baking Time 10 minutes in refrigerator
  • Difficulty Easy

For the Cake Bites:

  • 1 package OREO cookies
  • 1 8oz. package cream cheese
  • Candy Melts (various colors)
  • Sprinkles for decorating top
  • Additional Items you may want to get:

  • Lollipop plastic covers
  • ribbon for tying

  • 1. Grind Oreo Cookies to fine crumbs in a food processor
  • 2. Put the crumbmix into a boal and hand mix with cream cheese.
  • 3. The dough should have a consistency of play-dough
  • 4. Roll dough into 1″ balls, refrigerate them for at least 10 minutes
  • 5. Now melt your candy wafers.
  • 6. Dip the cake bites in your choice of colored candy wafers (melted, with a spoon, that’s easier)
  • 7. Decorate right away. Add sprinkles, m&m’s etc. to decorate (don’t wait too long, otherwise it won’t stick to the base)
  • 8. When you’re done, put it in a styrofoam block to dry completely
  • 9. And now: Have fun decorating and enjoying these cute little and colorful cake bites.
