Hello rainy Monday: Delicious Red Velvet Cupcakes will bright up your day!

Hi happy rainy Monday everyone :-)

Wow this summer is really rainy over here, and cold. I know it is the total opposite in the States right now, super hot. I am with you guys. Too much heat always makes people tired and going to work is a torture. Even moving is torture.
Plus baking is really difficult!
I am actually wearing a hoodie and another zip hoodie right now! Can you imagine? :D

I think my today’s post is full of heat when it comes to color. And I hope it does not hurt your eyes. These Red Velvet Cupcakes really “brighten” your day :-)
I love them, since I made the Red Velvet Cake a couple of weeks ago, I had to make some cupcakes again. Red Velvet Cupcakes. Yum.
Especially with that lovely frosting – You will LOVE it, trust me.

I have quite a few how-to pictures to show, beware though, red red red everywhere :-)
And I will share the recipe of the Red Velvet Cupcakes and Frosting with you guys.

See that amazing color?? This is so not a regular dessert. It is just so good looking.

Read on, because it’s “red day” today here on ninerbakes.com :-)

  • Prep Time 15 minutes
  • Baking Time 20-25 minutes
  • Difficulty Medium

For the Red Velvet Cupcakes:

  • 1 cup shortening (I used butter because it is hard to find shortening around here)
  • 1 3/4 cup sugar
  • 2 1/2 cups cake flour (I used all purpose flour)
  • 1 1/4 teaspoon salt
  • 2 whole eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon vinegar
  • red food coloring – I used: Sugarflair Red Extra Paste Colour
  • 1-1/2 teaspoon cocoa powder
    • 1. Preheat your oven to 350 degrees / 180 G Celsius.
    • 2. Pour together the flour and salt, set aside.
    • 3. With a wire whisk and in a seperate bowl, stir together the buttermilk, eggs, baking soda and vanilla. Now add the vinegar to the mixture and mix everything together.
    • 4. In another tiny bowl, add the cocoa powder. Set aside.
    • 5. Now cream the butter and sugar together until light and fluffy. Now add a little bit of the flour mixture to it, then a little bit of the buttermilk/egg mixture. Repeat until everything is well mixed and combined.
    • 6. Then pour the cocoa powder and red food coloring into the mixture. Use toothpicks to do so. I probably used around 12, I always take 2 toothpicks, dunkd them in the little container and pour it in the batter. Then I used a handmixer to mix it all well together. Repeat until you have your desired color. Deep, deeeep, bright red in this case. I love it!
    • 7. Pour the batter into a cupcake tin that has been lined with papers (fill them up to 3/4 full) and bake for 20-25 minutes. Use the toothpick method to see if cupcakes are done (insert it in the center of the cupcake and see if it comes out clean).
    • I told ya, it is RED DAY today :-)

    • 8. When you remove them from the oven, wait another 20 minutes to let them cool before you ice these sweet looking red velvet cupcakes.
    • 9. Twenty minutes are over? Now ice with yummy frosting, see recipe below.

    For the lovely FROSTING:

    • 5 tablespoons flour
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • 1 cup butter
    • 1 cup granulated fine sugar (no powdered/icing sugar!)
    • raspberries to decorate top

     

    • 1. In a small saucepan, pour in flour and milk, and use a wire whisk to stir constantly while heating it up. It needs to thicken. At first you think nothing will happen because the mixture is very thin. But this will change, trust me :-)
      It has to be very thick. Stir and stir and stir so it won’t burn to the saucepan’s bottom. When it is thick enough, remove from heat and let it cool completely to room temperature. You really should stick to this, it must be completely cool before you stir in the vanilla.

    • 2. While you wait for the mixture to cool down to room temperature, cream the butter and sugar together until it is all light and fluffy.
    • 3. Now it is time to add the cooled flour mixture and beat it all together with a hand mixer. It can look seperated at first, if it does, beat it a little longer. Beat it until it looks like whipped cream.
    • 4. When the frosting is looking yummy AND tasting yummy (come on, give it a try!) you can spread it on your cooled red velvet cupcakes. Use a spatula or icing bags to decorate nice swirls on the cuppies.
      You can also add food coloring if you want to. But in this case, red and white is such a perfect match. I am in love.

    • Note: You might need to double this frosting recipe in order to frost all the cupcakes.

  1. What a vivid cupcake is this!! While reading the recipe I realised that these cupcakes are very easy to make and the addition of buttercream gives them a rich and moist taste. I also noticed that you use flour in your frostin. I will give this a try. I am sure it will make the frosting better. Thanks!

  17. Hey, danke für das super Rezept! Ich fand die Bilder so toll, das ich es direkt mal nachgebacken habe. Super einfach und lecker. Das nächste Mal werde ich für das Frosting nur deutlich weniger Zucker nehmen und ich werde mir evtl. die Lebensmittelfarbe beschaffen, die Du hast, allerdings enthält diese Azofarbstoffe…Muss mal schauen. Auf alle Fälle werde ich die Cupcakes wieder backen :-)

So, ich hab die Cupcakes heute nochmal gebacken und bin schon auf die Reaktionen heute Abend gespannt ^-^ Liege ich richtig damit, das man beim Frosting die Mehl-Milchmischung abkühlen lassen muss, damit die Butter beim mischen nicht gerinnt? Hast Du eine ca. Zeitangabe für mich, wie lange es dauert, bis die Mehl-Milchmischung auf Raumtemperatur ist? Die Zuckermenge beeinflusst auch die Festigkeit des Frostings, wenn ich Deinen Kommentar oben richtig verstanden habe? Ich habe heute statt 1 Cup nur etwas mehr wie einen halben genommen und es war tatsächlichetwas weicher als beim letzten Mal, oder ich hab die Mehl-Milchmischung nicht genug abkühlen lassen (was ich nicht glaube, da ich mit meinem kleinen Finger getestet habe, wie warm sie noch ist. Ich backe sie einfach noch Mal *lol* Davon kann man nie genug machen ;)

      Super, dass du nochmal einen Versuch startest, ich stimme dir nur allzu gern zu: Davon kann man nie genug machen und zum Glück gibt es immer wen, mit dem man die Cuppies u. das leckere Frosting teilen kann.
      Zu deiner Frage: Also bis die Masse abkühlt dauert es schon ein wenig. Deswegen fange ich z.B. immer erst mit dem Frosting an, während die Masse abkühlt kann man so lange die Cupcakes vorbereiten und backen. Aber die Hast du ja heute schon gemacht gell :-)
      Was einfach wichtig ist, das der Top nicht mehr warm ist, auch nicht lauwarm. Dann ist genau der richtige Zeitpunkt um die Butter hinzuzugeben (die am besten auch Raumtemperatur hat).
      Mit weicher meinst du auch dünner? Sprich nicht so ideal zum “frosten” und verzieren?

Das Frosting ist diesmal etwas dünner / flüssiger geworden, aber ich denke mein Fehler lag doch daran, das ich ungeduldig war und die Mehl-Milchmischung nicht genug habe abkühlen lassen und die Butter (die im Gegensatz zum 1. Mal backen, noch nicht ganz auf Raumtemp. war) dadurch etwas geronnen ist. Wie gesagt, beim nächsten Mal bereite ich das schon vor dem Backen vor, damit alles (Butter & Mischung) gleiche Temperatur hat.
        Ich meld´ mcih dann noch mal, wenn ich sie nochmal ausprobiert habe (bei meiner Neugier wahrscheinlich nächste Woche wieder ^-^).

  23. So! Mission “Der perfekte Cupcake” ist abgeschlossen! Und ich kann zufrieden sagen, diesmal ist alles perfekt geworden. Ich hab´ das Frosting zuerst vorbereitet, d.h. zuerst den Milch-Mehlbrei hergestellt, dann die Butter im Cup abgemessen und alles bei Raumtemperatur stehen lassen. Erst dann hab ich mit den Cupcakes angefangen und bis die fertig waren (Teig hergestellt, backen, komplett auskühlen lassen) waren auch der Milch-Mehlbrei und die Butter auf einer Temperatur :-) Also hat diesmal alles wunderbar geklappt. Ich werd´ mir demnächst noch Lebensmittelfarbe bestellen (die die man im Geschäft kaufen kann färben nicht so intensiv) und dann werd ich sie mal “Original” rot machen ^-^
    An dieser Stelle noch mal ein herzliches Danke für das tolle Rezept. Als nächstes kommen Deine Schokoladen Cupcakes an die Reihe ;))

    Ich bin zufällig auf deine Seite gestoßen und mir läuft das Wasser im Mund zusammen =) All diese tollen Rezepte *yummy*
    Ich würde gerne diese Cupcakes nachbacken, jedoch blicke ich noch nicht so ganz bei den Mengenangaben durch.
    Das mit den Tassen-Angaben verstehe ich, aber bei den Teelöffel-Angaben bin ich etwas verwirrt.
    Gehören wirklich eineinviertel (also ein ganzer und noch 1/4) Teelöffel Salz in den Teig?

    Wollte lieber vorher mal nachfragen, bevor ich mich “verbacke” =)

    • Hi liebe Irene, ich danke Dir für dein Lob, das freut mich riesig =) Es kommen tatsächlich 1 1/4 teaspoons Salz hinein =) Salz ist beim Backen sehr wichtig, auch wenn es komisch erscheinen mag :-)

      • Hallo Niner,

        ich habe heute endlich diese tollen Cupcakes gebacken und sie sind wirklich sooo lecker geworden!
        Vor allem das Frosting (auch wenn ich nur 120g Zucker verwendet habe) hat mich und meine Familie total umgehauen!
        Genau so ein Rezept habe ich schon ewig gesucht und jetzt endlich gefunden =) DANKE dir dafür!

        Mein Bruder meinte: “Wow, die schmecken ja so richtig professionell und so richtig amerikanisch.”

        Sie schmecken wirklich absolut amerikanisch. Der typisch deutsche Muffin-Teig wird ja meist etwas anders zusammengesetzt und ist dann so richtig “schwer” und “dick” (mir fehlen grad die richtigen Worte)
        und mit diesem Teig werden sie so richtig schön fluffig und locker wie es in den USA üblich ist. Einfach super!
        Ich war erst etwas skeptisch wegen der Menge an Salz, in deutschen Rezepten wird ja meist nur eine Prise davon genommen und es war daher für mich etwas ungewohnt.
        Aber es passt alles einfach ganz wunderbar zusammen!

        Als nächstes wage ich mich an dein Cheesecake-Rezept ;)

        Darf ich fragen, welchen Bezug du zu den USA hast? Du schreibst ja hier auf deutsch und auf englisch. Hast du einen deutschen Background und wohnst in den USA oder umgekehrt? Dann würde es auch nicht wundern, dass du an so tolle Rezepte kommst ;)

        • Liebe Irene, ich danke Dir für deinen tollen, ausführlichen Kommentar. Riesig freut es mich, dass das Rezept SO gut ankam, ich finde das Frosting ebenfalls so klasse, es ist auch nicht so mächtig, wie viele andere.
          Ich selbst habe als Teenager einen Austausch in Kanada gemacht, seitdem bin ich regelmäßig dort, in den USA und Kanada und generell bin ich eher dem Lifestyle verfallen – das ist der Grund, wieso alles nicht so “Deutsch” ist hier auf meiner Website.
          Ich freue mich auf dein Feedback, wenn du den Cheesecake ausprobiert hast.

  29. Hi Niner,
    ich hab eine kleine Frage an dich und zwar, das Kakaopulver, ist das “normaler Back-Kakao”?
    Das Pulver sieht etwas hell aus, eher wie “Kakaogetränkepulver” also Nesquik-Zeug oder so.

    Ich will die Cupcakes nachbacken, hab die Farbe schon bestellt und will es mir nicht durch das falsche Kakaopulver versauen. xD

    • Hallo Anja,
      ich benutze immer Back-Kakao, niemals KabaFit oder Ähnliches, das kann man zum Backen nicht verwenden.

  30. hi, for the frosting, i dont have milk! can i substitute that for anything, or skip it?

    also, can ii use the marshmallow frosting on these cupcakes, do you think?

      I am sorry but you definitely need milk for this recipe. I have not tried anything else so I cannot really tell you what else you can use, I recommend to go get milk before making this recipe =)
      OR: You can definitely use the marshmallow frosting to these cuppies – tastes yummy!
