Peanut Butter filled Chocolate Cupcakes topped with heavenly Marshmallow Frosting

Hello everyone, wishing you all a happy new year 2014!
Hope you had a wonderful New Year’s Celebration with your friends and loved ones.

Before I start off with the sweet things, I have something to share with you:

I have been making my favourite frosting again. Marshmallow Frosting or also known as 7-Minute Frosting.
I would print this on a shirt, it is that good… “Marshmallow Frosting” :)

I baked chocolate cuppies to go along with it but that did not seem enough. So I made a yummy peanut filling, the same recipe from my Peanut Butter Cups blogpost, and oh boy, that combination between the three treats is just yum!

Not to get you all confused, let me show you in detail how to make all these treats.

Let’s do it:

  • Prep Time 10 minutes
  • Baking Time 20-24 minutes
  • Difficulty Easy
  • Servings 12-15

For the Chocolate Cupcakes:

  • 2 cups of sugar
  • 1 3/4 cups of flour (all purpose)
  • 3/4 cup of cocoa (unsweetened, good quality if possible)
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. of salt
  • 2 eggs (organic if possible)
  • 1 cup of milk
  • 1/2 cup of vegetable oil
  • 2 1/2 teaspoons pure vanilla extract
  • 1 cup of hot boiling water

Additional Items you may want to get, makes a nice gift:

  • 1. Preheat your oven to 350 degrees / 180 G Celsius and prepare your cupcake pan with cupcake liners of your choice.
  • 2. In a big bowl, pour together the sugar, flour, baking powder, cocoa, baking soda and salt, set aside.
  • 3. Now you can add the eggs, milk, vegetable oil and vanilla extract. Now beat on medium speed until everything is incorporated.
  • 4. Now carefully pour in the boiling water. Mix with a fork before you start mixing with your mixer, because it can get messy :)
  • 5. Now pour the very thin batter into your cupcake pan and fill up the cupcake liners 2/3 full.
  • 6. Bake in your preheated oven for about 20-24 minutes, use a toothpick, stick in the center of the cupcake, if it comes out clean, the cupcakes are done.
  • 7. Let cupcakes cool for a couple of minutes before you remove them from the pan. Let cool completely on a plate or wire rack.
  • 8. When completely cooled, you can start frosting them. The marshmallow frosting recipe follows below.

Now prepare the Peanut Butter Filling by following this recipe here.

  • 1. Fill your peanut butter mixture into a piping bag fitted with a round piping tip.
  • 2. Stick the piping tip way inside the middle of the cupcake and press out the peanut butter filling as you move up.

  • 8. And you are done, let’s move on to the marshmallow seven minute frosting.
  • Prep Time 10 minutes
  • Mixing Time 11-15 minutes
  • Difficulty Easy-Medium
  • Servings for 15-24

For the Marshmallow Frosting (slightly adapted from Martha Stewart):

  • 1. To make the frosting, combine sugar, the egg whites, water and cream of tartar in a big bowl / bowl of an electric mixer.
  • 2. Whisk until everything is extremely well incorporated and a little foamy. Now set your bowl over a pot or kettle of simmering water and whisk (5 minutes). The sugar needs to be dissolved, that is very important.
    To test if the sugar is dissolved, rub a little bit of the mix between two fingers, you will notice undissolved sugar crystals. Stir a little longer until sugar is completely dissolved.
  • 3. Now transfer your bowl to a stand mixer (whisk attachment) or mix it with a hand mixer, but it will take longer! See the Instagram Video below, I used a hand mixer, so there is proof it works :)
  • 4. Now let’s beat: On high speed until your marshmallow frosting forms stiff peaks – it will take about 11-15 minutes.
  • 5. Add vanilla extract and beat again until combined.

  • 6. Now taste it: Isn’t it delicious?

  • And so shiny…

  • Now Transfer the frosting to a large pastry bag which is fitted with a 1/2-inch round tip or either size you like.
  • 7. Pipe time! Pipe a spiral of frosting or any other swirl you desire, into a 2-inch-high cone shape.

  • 8. And you are done and those yummy cuppies are ready to serve.

    I had a couple questions though. If there is some frosting leftover will it be good by the next day if i put it in the fridge? And if I make the cupcakes a day ahead will the frosting still be tasty the next day??

  14. I have to make three dozen cupcakes for my sisters birthday, and I’ve been wanting to find a new yummy frosting to try, and this is it! I was wondering about how many cupcakes do you get out of a batch of this frosting? I am so excited to try this recipe out, it looks finger and bowl licking good!!

      It is finger and bowl licking good, at least for me :)
      It depends how much you pipe on each cupcake, I would say 12 to 17 if you put a little more on each cupcake.

  15. Hi Niner,

    We just finished making your vanilla cupcakes with this amazing marshmallow frosting. It is gorgeous, pure white and delicious!! My question is, do you need to cook the mixture over the double boiler for a certain amount of time for the eggs to be safe? We ended up keeping ours on a little longer than probably necessary just because I was concerned about the raw eggs. Also, it makes quite a big batch, so we have a good amount leftover (yay, more reason to bake again!). Will it keep long in the fridge?

      I usually cook it a little longer too, until the sugar is dissvoled.

    Zu dem Frosting hätte ich aber noch eine Frage. Marshmellows kann man ja auch schön im Wasserbad schmelzen. Könnte ich die Masse auch als Frosting nutzen?

    ich habe deine Seite heute zufällig über dein Cheesecakerezept entdeckt (welches ich auch noch ausprobieren muss !! :D <3 ). Aber zu dem Cupcake Rezept hätte ich noch eine Frage. Vanilleextrakt ist schwer zu bekkommen wenn man spontan backen will, hast du eine leckere Alternative zu dem Produkt von American Heritage? Eine die man in normalen Supermärkten kaufen kann? :)

  22. Hi! The cute dotted cups shown or at least what i’ve found are not intended for baking, so inside them i guess there’s a regular baking cup. I tried your recipe it is easy and convenient to pour, but the regular paper baking cups get soggy and loose their shape which makes the look of the cupcake messy. Is it something i might be doing wrong or how do you prevent that? Or is the only solution to insert them in another party cup?

    I will be using your fabulous recipe for my three year Bbday party.
    Do you suggest baling cupcake day prior and frosting following day? Or both on the same day? Will cupcake do well sitting out overnight and then frosting in the morning?
    I need to prepare 25 cupcakes n be ready to go by 10am..
    Any suggestions?

      Usually it is best to bake and make the frosting on the same day but I have done that before: Baking one day, frosting the next. The cupcakes were fine sitting on the counter overnight.

  25. Your cupcakes are beautiful! I made them today, taste great not nearly as pretty. Anyhow this is what I would do next time, I would use the heavier duty cupcake liners, I used the lighter and they held up, but if you are going to pile on as much frosting that’s in the pic, go for the better liners. Next I ended up with a almost a whole mixing bowl full of frosting left over. Now I brought my cupcakes to a casual bbq, no special occasion so I didn’t know how I was going to transport them with all that frosting, plus I had to put them in a cooler for transport. I would make these again maybe just do half the frosting receipe. Any suggestions for my leftover frosting besides more cupcakes?

      I usually pipe the frosting way up high so there won’t be any leftovers and if there were, I probably would eat it with a spoon.

    Vieeeelen Dank für all die tollen Rezepte! Hab bis jetzt den Cheesecake ausprobiert ( abgesehn davon dass wir keine richtigen kekse gefunden haben :/ nicht zu empfehlen sind Oreos’ !!! :D ) richtig lecker! Diese Muffins MUSSTE ich jetzt schon 3 mal backen weil meine Freunde süchtig danach sind :D ! Kurz gesagt wir lieben deinen Blog!!! Bitte poste noch viele weitere Backrezepte (insbesondere für Cupcakes und Kuchen bzw. Torten! ). Wäre toll wenn du auch immer noch Alternativen zu den amerikanischen Produkten angeben könntest, da die kurzfristig nur sehr schwer zu riegen sind ! :D

  28. Hey! So I was wondering if this marshmallow frosting kept…as I see many of you are wondering as well. I didn’t leave a comment, and instead looked for the answer among the thread. I don’t see an answer, well here ya go….YES, it does keep. You can make it and keep it in the bowl in the refrigerator, you can make it and pipe it onto your cupcakes, stick them in the refrigerator or even keep them on the counter until the party. And with LEFT OVERS…yay!…You can make meringue cookies!! Fold in a cup of mini chocolate chips to the left over frosting and pipe them out onto a buttered/floured cookie sheet. Bake at 200*F for 3 hours with the oven door propped open with a wooden spoon. If you don’t want meringue cookies, and if it’s cold where you are (or warm, whatever) you can use the left over frosting in a cup of hot cocoa :) Very versatile frosting! Thanks for the recipe, it was a huge hit at my son’s Olaf (from Frozen) birthday party…looked just like snow.

Ich habe gestern das Marshmallow Frosting ausprobiert und jetzt hat sich das ganze Eiweiß vom Wasser abgesetzt und ich habe ein Zucker-Eiweiß Wölkchen das auf einer Pfütze schwimmt :D Zuerst dachte ich ja das bei den Zutaten angegebene Wasser könnte fürs kochen gewesen sein aber dann habe ich nochmal nachgeschaut und ich denke ich habe alles richtig gemacht…Was kann oder soll ich denn jetzt tun?:D

  33. My frosting did not come out nothing like you have on your picture. could it have been because i used brown sugar? Mine was still too soft and not marshmallow-ie like. I still used it but it would of been nice if it came out like that. I also used a hand mixer so maybe that was the problem.

    ich hab da mal ne Frage, zu dem Marshmallow-Frosting.
    kann man statt dem Eiweiß auch Eiweißpulver nehmen?
    ich hab nämlich einige Kinder, zwei Schwanger und zwei die stillen als Gäste und ich weiß, dass sie pingelig sind mit rohem Eiweiß.

    und wenn das geht, kannst du mir auch sagen wieviel ich stattdessen nehmen muss?
