The Best Original New York Style Cheesecake!

…at least for me.
You guys have no idea how long I have been looking for THE recipe. I absolutely LOVE NY-Style Cheesecake, and THIS recipe is the ULTIMATE!
A couple of sneak peaks…


This is it. I AM IN LOVE. Seriously…
7 years ago I posted this recipe online, and now in 2018, it is still many peoples’ favorite. I appreciate it so much!

On the web there are sooo many recipes that promise to be the one.
The best here, the ultimate one there..
Whenever I tried one of those, I could not wait to be done. I love the NY Cheesecake from Starbucks or the ones from New Yorks Cheesecake Factory, but the prices for a slice is ridiculously expensive.
That’s why I just wanted my very own recipe (give thanks to Martha Stewart please, isn’t she awesome?) – and believe me – this one feeds many people and is worth the cost too.
I can already imagine sharing it with my friends who absolutely adore cheesecake too.
This is going to be nice!
It is so rich, you can’t eat that much, which is probably a good thing for our hips anyway :)


Please read on to get the ultimate no-crack New York Cheesecake recipe.

  • Prep Time 25 minutes
  • Baking Time 75min + 1hr + 8hrs in refrigerator (or better: overnight)
  • Difficulty Medium
    For the Cheesecake’s Crust:

  • 11-14 Graham Crackers or any other type of wheat cookies
  • 6 tablespoons melted butter
  • butter for pan (important: room temperature)
  • 2 tablespoons sugar
  • pinch of salt
  • For the Cheesecake (one 10-inch cake):

  • 3 1/2 pounds (7 eight-ounce packages) philadelphia cream cheese (important: room temperature)
  • 2 1/4 cups sugar
  • 1/2 cup all-purpose flour
  • 1 cup sour cream (important: room temperature)
  • 1 1/2 teaspoons pure vanilla extract
  • 5 large eggs (important: room temperature)
  • Some people do not want to have such a huge amount of cheesecake, and one of my readers, Laura M. was so kind to reduce the recipe for us!
    She made it over 20 times and it came out perfectly. Thanks so much Laura! Here it is:

    For the Crust:
    – 11-14 Graham Crackers
    – 6 – 8 tablespoons melted butter
    – butter for pan (important: room temperature)
    – 4 – 5 “grinds” of sea salt [1 “grind” equals one twist of a salt mill]

    For the Cheesecake (one 9- or 10-inch cake):
    – 4 eight-ounce packages Philadelphia cream cheese (important: room temperature)
    – 1 1/3 cups (regular or “superfine” sugar
    – 1/4 cup all-purpose (or “patisserie”) flour
    – 1/2 cup sour cream (important: room temperature)
    – 1 1/2 teaspoons pure vanilla extract
    – 3 large eggs (important: room temperature)

    • 1. Preheat your oven to 350 degrees.
    • 2. Butter the sides and bottom of a 10-inch springform pan
    • 3. Now wrap exterior of the pan (including base) in a double layer of foil.
    • 4. To make the crust for the cheesecake, process graham crackers in food processor until fine. Now you can combine the crumbs, the melted butter, sugar, and salt in a medium bowl.
    • 5. Transfer the mixture to the pan and pat it into a flat layer using the bottom of a glass or meat pounder to make it even.
    • 6. Put the springform pan in the refrigerator for about 15 minutes. Then place it on a baking sheet and bake until the crust is firm, for about 15 minutes. Let the pan cool completely. (with left over cheesecake mix you can also fill cupcakes with cheesecake)
    • 7. Now beat Philadelphia (best brand for me!) cream cheese in a large bowl, on medium speed until well combined and fluffy, for about 3 minutes (scrape down the sides too)
    • 8. In another large bowl, whisk together the sugar and flour. Set your mixer on low speed and add the sugar mix to the cream cheese. Mix until well combined and smooth.
    • 9. Now it is time to add the sour cream and vanilla. Mix again until smooth.
    • 10. Add the 5 eggs, one at a time though, beating until they are just combined (do not overbeat)
    • 11. Now we are almost done. Pour the cream cheese filling into your springform pan. Place the pan inside a large, roasting pan. My springform pan fit right into it, I did not have much space left :-)
    • 12. Carefully pour boiling water into the roasting pan. Pour in halfway up sides of springform pan. This will prevent the cake from cracking. It worked for me. Hopefully for you too.
    • 13. Bake for 45 minutes, then reduce oven temperature to 325 degrees and continue baking your New York Cheesecake until it is set but still slightly wobbly in the center, another 30 minutes.
    • 14. Turn off your oven but leave your cake in oven with the door halfway open for a good hour.
    • 15. Now transfer the springform pan to a wire rack and let the cake cool completely. Refrigerate it uncovered overnight. Then you get the best result :-)
    • 16. Before you unmold the cake, run a knife around the edge of the cheesecake. And also: When cutting out slices, hold the knife under hot tap water. Dip the knife into hot water and then wipe it on a clean towel before making a new cut. This method will prevent chunks of cake from the previous slice you made from depositing on top of the next slice. I tell you, this is great and it looks really good too.
    • Now bake your cake. It is not even that hard. I know it sounds so challeging, to bake your own favourite cheesecake recipe.

    I finally made it. From now on I will bake variations with this recipe, but certainly won’t try a new NY Cheesecake recipe for a good while. I found mine. Yessir.

  9. I made this recipe and it is indeed very delicious, but I had WAY too much batter for my springform. Like… an entire loaf pan and two ramekins’ worth of too much. It tasted great though so I assume the proportions are good–I just think that 3.5 lbs of cream cheese is much more than what you’d need for a 10″ cake! :)

            Good question. No, I have always followed Niner’s directions to a T: 350° for 45 minutes, then 325° for another 30 minutes, followed by an hour in the oven with the door cracked (with the oven turned off), then letting it come to room temp, then sticking it in the fridge overnight. I call it “baby-sitting the cheesecake”.

            So… it’s truly easy (with one exception) to bake, but it’s an 18-hour procedure, start to finish. The cooling down part is equally as important as the baking… it’s all part of the process that makes it perfect!

            For me the only hard part of the entire procedure is making sure no water touches the cake during the bain-marie. It’s worth it to use three sheets of aluminum foil to make sure this doesn’t happen. (I have managed to mess this up twice, and while only part of the cake was ruined, it was a pity to have to throw part of such deliciousness into the compost bin!)

            I hope you see this message: it’s the only way I could figure out to respond. Eight ounces = 225 grams. So you’ll be using 900 grams of cream cheese.

            I know… a lot, right? That’s why I originally reduced the recipe from 7 packages to 4. It’s still a lot of calories, but as the cheesecake turns out very dense, you’ll feel satisfied by a small slice.

            P.S. Lora, I’m sorry: I only saw your follow-up messages just now. (My answer would have been just to triple-criss-cross the 12″ aluminum foil, which always works for me.) How did your cheesecake turn out? I’d love to know!

            I apologies for replying so late. I have tried your reduced version but I have reduced it further into half. Because I didn’t want to have such a big cake. It came out well, though still need some modifications. Also I couldn’t find the Graham crackers in my country. I used Orea biscuits instead. It came out quite well though I still have to fine tune the timing of the baking. But still, it is delicious. Would you know what will be the baking time be since I have reduced all the ingredients into half? I used a 7″ square pan. It didn’t have so much cheese but still tasty.

  14. This cheesecake is AMAZING! I have now made this my go to recipe and it is in my binder of “Family Recipes” I will pass onto my friends and family.

    It never cracks and is so creamy!!

    I even made a marbled version this past Sunday for Christmas and it was so good! I just added 1/2 a bag of melted semisweet chocolate to two cups of batter and swirled it into the regular batter. It was DELICIOUS!

      • I see I am a little late, but I added a half bag of melted chocolate that I dolloped and then swirled. A half bag of chocolate is about 6 ounces. :) I am making this again tonight. :)

    • Hi John, this is a good question. I have never made a cheesecake without the bottom crust so I cannot tell you exactly how it will look like in the end, but it is worth trying out.

      • Hello again, yesterday I made your cheese cake receipt, I followed your exact receipt using a 10″ by 2-3/4 high spring form. I had 8 friends over for a birthday party (mine) and everyone said it was THE best cake they have ever had! By the way I did not use any graham crackers None. Just poured the batter directly into the form. I used a 22″ wide foil and wrapped 2 layers around the outside of the form just like your pictures so water would not seep in. The bottom of the cake was the same color as the rest of the cake (white) and no cracks at all. It was delightful watching each of the 8 friends taking the first and second bite with a big smile on their faces. Thanks for this receipt, everyone now wants the receipt…JR

    • Hi! Speaking for myself, I cannot IMAGINE why anyone would want to omit the graham-cracker crust! I’ll bet the smiles on your friends’ faces would have been even bigger if they’d had some nice crust to munch into at the bottom.

      Cheesecake is so smooth and supple; it really calls out for a crust: the contrast in textures is key. And the graham cracker crust is traditional for a reason.

      I have one question for you: apparently you are German and live in Germany? How do you get all the ingredients? I live part of the time in France, and there you cannot get graham crackers, nor cream cheese, nor sour cream.

      Result: impossible to make in France!

      P.S. We try not to overdo sugar in our household, and so I omitted the sugar from the crust. (They already have sugar in them, and so I just mixed the graham crackers with the butter. Worked great!

      • Hi, Niner, I think you have made cheesecake without the crust since you wrote that reply above, for the interior of your cheesecake cake pops! I also made a crustless cheesecake for the cake pops. It worked great for the pops, but the pleasure of eating it AS A CHEESECAKE was much reduced.

        Frankly, I don’t see the point, unless one is allergic to gluten.

      Gern rechne ich es Dir um:
      1/2 cup Mehl = 70g Mehl
      2 1/4 cups Zucker = 428g Zucker
      1 cup Sauerrahm = 240ml Sauerrahm
      Ich hoffe mit den Infos gelingt Dir der Cheesecake 1A :-)

  25. So this recipe is my go to recipe and I have made it who knows how many times and it is wonderful!! Let me just say MAKE SURE YOU USE THE WATER BATH. I ran out of foil and decided to experiment and just see how it would come out without the water bath and even though it still taste the same the appearance was not great. The top cracked, the sides browned and it was not flat on top like usual. So just some words of advice. But yes this is the BEST CHEESECAKE EVER!!!! =)

    Da ich auch sehr gerne Cheesecake esse wollte ich mal dieses Rezept probieren. Leider ist es nicht 100% gelungen aber das liegt an mir denke ich. Ich habe alles 100% exact befolgt und auch über Nacht im Kühlschrank gelassen. Leider ist der Boden extrem Matschig geworden und Nachts der ganze Kühlschrank mit einer klebrigen, gelblichen Pampe vollgelaufen. Was hab ich falsch gemacht?       Zunächst Danke fürs Nachbacken, Cheesecakes sind echt eine Sache für sich. Diese Masse die da rausgelaufen ist, ist wahrscheinlich der Mix aus Butter und Keksen, zudem vielleicht noch Flüssigkeit des Cheesecakes selbst.
      Was da evtl schief gelaufen ist: Zuviel Butter im Boden / Zu viel Butter für zu wenig Kekse? Oder: Der Boden wurde nicht lang genug gebacken und ganz wichtig, evtl nicht ganz abgekühlt? Er muss ja hart werden und danach abkühlen, damit nicht viel austreten kann von der Cheesecake Masse. Ich lasse den Cheesecake gern noch mit Folie umwickelt (zumindest den Boden) im Kühlschrank stehen – normalerweise ist das nicht nötig aber es kann immer sein, dass so etwas passiert, wenn man zwar genau sich an Alles hält, aber eben doch nicht zu 100%, das geht ganz schnell :-) Ich hoffe sehr, dass man ihn dennoch ein wenig geniessen konnte? So ein Cheesecake ist ja nicht gerade billig, deswegen versuch ich immer mich aufs Backen zu konzentrieren, und nicht wie es oft der Fall ist, Multitasking mäßig durch die Wohnung zu wirbeln :-)
      Vielleicht versuchst du es ja nochmal?

      • ok, danke dir! ich habe den kuchen (da ich weg musste) nach dem backen einige stunden noch im ofen gelassen und dann über nacht in den kühlschrank. kann es daran gelegen haben? ich habe also nach der backzeit den ofen ausgestellt, tür leicht offen angelehnt und bin dann ausser haus für 6 stunden. dann hab ich ihn erst in den kühlschrank. :)

  27. We are in the middle of moving and my NY cheesecake recipe is packed- and of course a friend requested one for a cook out tomorrow! Though I’ve used my recipe for years, I don’t have it memorized but this one sounded very close. It does make A LOT of batter. A lot. My recipe calls for 4 packs of cream cheese, that much I do remember and it always seems like a bunch….so 7 is a ton! lol I have a Kitchen Aid stand mixer and it filled to the brim!

    Anyway, it’s in the oven at this minute and I’m praying the water bath works! I’ve done that before because mine ALWAYS crack- it’s a family joke at this point. But I’ve never boiled the water first and also have not let the door stand open for an hour- usually about 15 minutes. I’m praying that this time there will be no cracks :) And it smells wonderful- sure it’ll taste amazing. Thanks!

    • Hi! I just wanted to say that I’ve made niner’s fabulous cheesecake recipe 7 times already, and I took off from your idea of using just 4 “bricks” of cream cheese. I reduced all the other ingredients in the FILLING by 4/7 (slightly over 1/2, really), EXCEPT for the vanilla, and it has turned out spectacularly every time. I’ve received a ton of compliments!

      One note: in the idea that you couldn’t have too much of a good thing, I increased the amount of graham crackers and butter (I have never mixed sugar into the graham crackers; they are sweet enough already) in order to achieve a thicker crust. It was a mistake. The amount of crust that niner suggests is PERFECT.

      Oh, by the way, I follow niner’s instructions for baking PRECISELY and none of my 7 cheesecakes has cracked!

    Ich hatte keine form, in die ich die springform reinstellen konnte, kann das daran liegen? allerdings dürfte das doch hinsichtlich der konsistenz keinen unterschied machen oder? hast du vielleicht einen tip?`

      • Hi Suse, mensch das ist ja komisch, aber ich bin froh, dass der Kuchen nochmal fest geworden ist und er dir schmeckt. Die Springform war nicht in einem Wasserbad, richtig? Das backt ja nochmal zusätzlich den Kuchen ein wenig mit, daher glaube ich, war er nicht ganz fertig.

  29. Hi! I am literally drooling only by the pictures.. However, I have a big problem… You see I am from Greece and no matter how hard I tried I could not find sour cream. Do you know if it can be made with heavy cream or how I could make my own sour cream?

    • Helen, thanks for stopping by :-) Sour cream – a home made version, most definitely possible :-)
      Here is what you can do:
      Ingredients:
      – 2 cups Heavy Cream
      – ½ cups Buttermilk Or Sour Cream
      How to:
      1. Use a glass jar or any other container with a lid and pour in the buttermilk and the heavy cream.
      2. Mix well!
      3. Now cover the jar (plastic wrap or lid) and let the mixture stand for 24 hours (room temperature) – so that it thickens.
      4. Refrigerate it and please use within 1 week

    • Hi! I just wanted to say that I’ve made niner’s amazing cheesecake 7 times already, and twice I substituted a nice thick PLAIN yogurt for the sour cream. Honestly I cannot tell the difference between the two, except that that the sour cream versions are a tiny bit richer.) But this recipe is already so rich with all the cream cheese (even though I use 4 “bricks” instead of 7, and reduce the other filling ingredients accordingly, except the vanilla) that a slight reduction in richness does not affect the texture. And a good tangy yogurt gives it that nice slightly ‘sour’ note as well as the sour cream!

    Irgendwo in den Kommentaren schreibst Du was von 2,1/4 cups sind 328 g im Rezept steht aber
    428.
    Möchte mir nicht durch zuviel Zucker den ganzen Kuchen versauen, selbst 328 g kommt mir schon
    sehr viel vor, in anderen Rezepten ist es deutlich weniger.

      ja da ist mir ein Fehler unterlaufen (im Kommentar), denn 1 cup Zucker sind 190 Gramm Zucker. Somit sind 2 1/4 cups dann 428g Zucker. Es ist viel, das stimmt. Der richtige NY Cheesecake ist leider Gottes eine riesen Kalorienbombe. Es gibt vielerlei anderer Rezepte, die deutlich weniger cream cheese und Zucker verlangen, die schmecken dann auch anders. Dieses Rezept ist wirklich sehr mächtig, keine Frage :-)
      Hoffe du probierst es dennoch aus, es schmeckt dir bestimmt :-)

    kann es sein das du dich beim umrechnen von pounds zu Gramm verrechnet hast?
    Beim Original Rezept von Martha Stewart steht 2 1/2 pounds cream cheese, das wären aber nur 1134 Gramm und nicht 1575. Vielleicht bleibt deshalb auch immer etwas übrig?
    Hab das Problem auch immer beim umrechnen von cups zu Gramm, da cup eigentlich eine Einheit für Flüssigkeiten ist und feste Zutaten wie Kokosraspeln oder auch Mehl nicht die selbe Dichte haben, somit auch andere Grammzahlen ergeben.
    Trotzdem vielen dank für das rezept werde es demnächst mal ausprobieren, sieht auf jeden Fall lecker aus!

    • Hi Silvia, liebsten Dank für deinen Hinweis. Jedoch gibt auf Martha’s Website mehrere Cheesecake Rezepte und das, was ich ausprobierte, verlangt tatsächlich 3 1/2 pounds cream cheese :-)
      Ich kenne das Umrechnungsproblem zu Genüge, überall steht was Anderes und im Endeffekt ist genau beim Backen ja jegliches Gramm zu viel nicht so vorteilhaft. Bisher hat es aber immer geklappt und vor allem geschmeckt :-)
      Ich backe generell selten nach Gram, ich habe alle Tools zu Hause um Amerikanische Rezept mit Cups etc. zu backen…kann ich jedem empfehlen =)

    das Rezept und die Bilder sind viel versprechend. MIr ging es ähnlich mit dem Bramleys apple pie. Aber nach sehr vielen versuchen hab ich mein Rezept so wie es mir perfekt erscheint.

    Eine Frage hab ich zum NY Cheesecake. Kann es sein das beim Boden, bei der Angabe der Kekse eine 0 fehlt. 15-20g ist doch sehr wenig, oder?

    erst mal Danke für das tolle Rezept, ich habe den cheesecake schon einmal ausprobiert und bin absolut begeistert!

    Jetzt habe ich ein riesengroßes Problem:
    Ich wollte den Kuchen für den morgigen Geburtstag meines Patenkinds machen. Dummerweise ist mir beim Zubereiten der Käsemasse der Rührbesen meiner Küchenmaschine mehr oder weniger “explodiert” und hat dabei sein Innenleben (eine nicht unerhebliche Menge Metallabrieb aus der Verankerung der einzelnen Bögen) über den Frischkäse verteilt, also musste ich alles auskippen. :(
    Nun bin ich so stur, dass ich mich davon natürlich nicht von meinem Plan abbringen lasse, diesen Kuchen zu machen, aber mein Problem ist, dass ich natürlich erst morgen früh um 8 wieder Philadelphia kaufen kann und wenn ich Zubereitungszeit+Backdauer+Kühlzeit ausrechne, dauert das ungefähr 9 Stunden, also wäre mein Kuchen um 17 Uhr morgen Abend fertig, das ist mir zu spät, also muss ich das um mindestens eine Stunde verkürzen.
    Zum einen will ich das erreichen durch eine kürzere Backzeit. Das funktioniert, da in meine Springform sowieso nur 2/3 der Masse passen und ich deshalb auch letztes Mal schon eine viertel Stunde früher den Ofen ausgeschaltet hab, da mir der Kuchen sonst zu dunkel geworden wäre. Außerdem hab ich noch ein paar Ideen zum Zeitsparen, weiß aber leider nicht, wie die sich auswirken, daher folgende Fragen:

    Was passiert, wenn ich die Stunde auskühlen im Backofen weg lasse und ihn gleich raus nehme? Damit wäre er schneller kühl genug um in den Kühlschrank gestellt zu werden.

    Was passiert, wenn ich ihn einfach weniger als 6 Stunden im Kühlschrank lasse?

    Was passiert, wenn ich ihn bevor es in den Kühlschrank geht, eine Stunde in den Tiefkühler stelle? Damit habe ich schon öfter ne Creme oder ne Mousse schneller steif und servierfertig bekommen.

    So, das waren meine Ideen wie ich Zeit sparen könnte, leider hab ich keine Ahnung, was davon klappen könnte und was nicht. Falls du das hier noch liest bis morgen früh (ich weiß, is unwahrscheinlich), wäre es cool, wenn du kurz deine Meinung dazu abgeben würdest.

    • Lieber Marc, wow zunächst einmal SORRY dass ich dir zu spät schreibe. Habe den Comment heute erst gelesen. Hoffe ich kann dir noch ein wenig helfen?
      Ich freue mich riesig, dass du das Rezept magst. Echt so ein Mist, dass Dir das mit dem Rührbesen passiert ist, SEHR frustrierend.
      So nun zu heute :-)
      Es geht ja darum, dass der Kuchen nicht bricht in der Mitte, daher die Stunde im Ofen lassen bei offener Ofentür. Aber: Versuch das Ganze doch auf 30min zu verkürzen..dann müsste es auch klappen.
      Weniger als 6 Std im Kühlschrank, klar das geht, es geht ja um den Geschmack und die Konsistenz, das bra man braucht immer eine Weile und daher lässt man Cheesecakes einfach über Nacht im Kühlschrank. Aber in deinem Fall musst du es verkürzen :-) Ich bin auch gespannt auf dein Feedback, würde bestimmt hier jeden interessieren.
      Tiefkühlung? davon rate ich eher ab, Gefrierbrand etc, man weiss nicht wie kalt deine Tiefkühltruhe ist, ich denke das würde ich lieber lassen.
      Natürlich kannst du es probieren, ich würde es dennoch nicht machen.
      Ich hoffe du schaffst das alles heute noch rechtzeitig. Ich wünsche dir viel Glück und wenig Stress – wobei ich weiß dass der Cheesecake ja recht aufwendig zu machen ist. Dennoch: Happy baking und freue mich auf dein Feedback.

      • Vielen Dank für die Antwort, macht auch nix, dass die knapp zu spät war. Ich hatte ja schon vermutet, dass du nachts besseres zu tun hast, als hier zu antworten. Mein Post war eher so ein hail-mary-post. ;)

        Klar gibts feedback, ist doch Ehrensache! Also, ich versuche mich kurz zu fassen, aber ich glaube, das klappt sowieso nicht:

        Wie erwartet war die kürzere Backzeit kein Problem, hatte das ja auch letztes Mal schon so gemacht, also 30 Minuten bei 180 und 30 Minuten bei 160 Grad. Das Aussehen des Kuchens lässt mich auch vermuten, dass selbst bei der vollen Menge eine Stunde reichen sollte, das ist sowieso von Ofen zu Ofen verschieden, wenn man viel backt und anspruchsvolle Dinge backen will muss halt seinen Ofen kennen sonst gehts in die Hose und ich hab den Verdacht, dass mein Ofen einfach extrem gut isoliert ist.

        Leider habe ich wohl zu wenig Wasser genommen dieses Mal, so dass am Ende sehr wenig Wasser übrig war. Dadurch ist der Kuchen etwas “hoch gegangen” und dabei natürlich ein wenig gerissen. Aber das hatte den Vorteil, dass ich sehen konnte, wann er sich noch bewegt beim Abkühlen und wann ich ihn aus dem Ofen nehmen konnte. Nach 20 Minuten hatte er sich wieder vollständig gesetzt, hab ihn dann noch sicherheitshalber 10 Minuten drin gelassen, also insgesamt 30 Minuten im Ofen gekühlt. Dann eine weitere Stunde in einem kühlen Kellerraum (naja, bei diesen Außentemperaturen war der Raum natürlich nicht sooo kühl, aber eben kühler als die Küche). Und danach noch für 4,5h in den Kühlschrank (Tiefkühler hab ich mich nicht getraut).

        Endergebnis: Trotzdem super lecker und auch die Konsistenz war gut. Meine Befürchtung, dass er glibberig ist, wie manch einer hier schon geschrieben hat, hat sich nicht bestätigt, aber die Konsistenz konnte ich auch nach dem Backen schon gut abschätzen und war von daher guter Dinge.

        Fazit: halbe Stunde im Ofen auskühlen und 4,5 Stunden im Kühlschrank tun es auch, aber ich würde es nur in Nofällen so machen und wer das Rezept zum ersten Mal ausprobiert oder nicht viel Erfahrung im Backen hat, der sollte sich sowieso an die Zeitangaben aus dem Rezept halten, es kann einfach zu viel schief gehn.

        Noch ne andere Frage: Gibts nen Trick beim abdichten der Springform? Bei meinem ersten Versuch ist so viel Wasser in die Alufolie gelangt, dass es wie aus nem vollgesaugten Schwamm raus gelaufen ist, als ich den Kuchen aus dem Wasserbad nahm. Dadurch lief auch so viel in die Form, dass der Boden ziemlich matschig war. Dieses Mal habe ich 2 Bahnen über kreuz und einmal rundherum gewickelt und echt super fest angedrückt. Das hat deutlich besser geklappt, aber ein wenig Wasser kam trotzdem durch. Mittlerweile hab ich mir überlegt, beim nächsten Mal eine Backmatte aus Silikon zwischen dem Boden und dem Rand der Form einzuklemmen, hat jemand noch andere Vorschläge?

    • Liebe Maike, schön, dass du vorbeigeschaut hast. Du kannst es sicherlich auch mit Cupcakes/Muffins probieren. Wenn du dann kein Wasserbad benutzt, kann es bloß sein, dass die kleinen Cheesecakes dann in der Mitte einen Riss bekommen.
      Oder du siehst dafür auch ein Wasserbad vor. Was du dennoch bedenken musst, dass die Backzeit nicht im geringsten so ist wie im Rezept :-) Das müsstest du abschätzen, bzw. siehst du ja, wenn die Cheesecakes leicht braun werden. Ich wollte mal eine Cupcake Cheesecake Version machen, dann poste ich meine Erfahrungen in einem Blogpost. Dir viel Erfolg, wenn du es vorher ausprobierst. Freuen sich sicherlich alle über Feedback :-)

        • Hi Susanne, ohne Alufolie habe ich es nicht getestet, das Wasserbad ist dazu da dass der Cake keine unschönen Risse bekommt, richtig.
          Dennoch würde ich bei einem Cheesecake immer Alufolie drummachen, da evtl. Flüssigkeit austreten kann. Also versuch es doch ohne Wasserbad, aber wickel dennoch Alufolie um die Springform :-)

    ich habe eben Dein Rezept getestet. Ich liebe NY Cheesecake und bin normalerweise eher ne Niete in der Küche. Jetzt steht der Kuchen zum Auskühlen auf dem Tisch, und ich weiß gar nicht, wie ich die Nacht überstehen soll, ohne zu probieren! Der Kuchen sieht auf jeden Fall super aus, nur ein klitzekleiner Riss (1 cm), kaum zu erkennen. Die Reste backe ich gerade als Muffins.

    Ich bin soooo gespannt, kann es nicht erwarten!!! :-D

      That’s funny — I’ve made this cheesecake seven times and I’ve always wanted it to get that lovely brown tint that niner’s has in the photos!

      Do you have an “oven thermometer” that dangles (or rests) inside your oven? My guess it that your oven runs “hot” and that the interior temperature is hotter than the temperature you’ve set it at.

      The one time my cheesecake did turn brown was when I discovered, after a half an hour, that my interior temp had risen to 400° ! I quickly lowered it, but the damage was done, and the next morning I had to dispose of a “ring” of about 3/4″ around the cheesecake. The rest tasted fine. (It wasn’t a big deal, as I’d made the (crustless) cheesecake in order to make niner’s Cheesecake Cake Pops, and I still had plenty of cake to work with.)

      Try it again: this cheesecake is THE BOMB!

    Endlich habe ich es geschafft, dieses super leckere Rezept auszuprobieren, nachdem deine Red Velvet Cupcakes so ein großer Erfolg waren =)
    Der Cheesecake ist wirklich soooooo yummy, alle sind förmlich über ihn hergefallen! Danke, dass du so tolle Rezepte mit deinen Lesern teilst!

    Eine Frage habe ich allerdings noch: Ist es wichtig, dass man unbedingt Philadelphia-Frischkäse nimmt oder reicht jeder normale Frischkäse mit Doppelrahmstufe?
    Ich muss zugeben, dass ich den Käse wild gemixt habe: hatte Mascarpone, der weg musste (500 g) und den Rest habe ich aus Philadelphia, Exquisa und günstigem Frischkäse gemixt.
    Es hat ganz wunderbar geschmeckt, trotzdem würde ich gern wissen, ob es einen bestimmten Grund hat, dass du Philadelphia angegeben hast.

      ich danke Dir für dein ausführliches Feedback!

      Natürlich MUSS man keinen Philadelphia Doppelrahmstufe Frischkäse nehmen – ich für meinen Teil finde viele Andere ein wenig zu salzig,
      besonders die günstigeren Varianten enthalten für meinen Geschmack ein bischen zu viel davon.
      Was super ist, gleich eine ganze Menge Philadelphia zu kaufen, wenn dieser im Angebot ist, kann man wirklich viel sparen =)

      Aber wie du berichtest, hat es dennoch hervorragend geschmeckt, also kann man das wohl getrost tun (günstigeren Käse).

    Auch bei mir blieb zu viel von der Käsemischung übrig. Habe den Rest einfach (ohne Keksboden) in kleine Soufflé-Förmchen gefüllt. Das wurde dann als Nachtisch verzehrt.

  52. Ich habe den Kuchen gestern mit günstigem Frischkäse gemacht und kann immer noch nicht glauben wie lecker er geworden ist. Genau die Konsistenz habe ich gesucht! Und wie schön der Kuchen einfach aussieht! :) Hab den Boden mit Butterkeksen gemacht, was wirklich sehr lecker ist. Vielen Dank für das Rezept, das ich schon lange gesucht habe :)

  53. Hi, I wanted to ask you, when you bake the crust, what temperature did you use? and is your degree in fahrenheit or degree celsius? my micro-oven maximum degree is 250degree celsius, so i don’t know what to do!:(

      • Hello! You bake the crust at the same temperature as the whole cake, at 350° Farhenheit, which is 176.66° Celsius. So your 180° oven will work fine!

            Or: Can’t you bake it at someone else’s house maybe?
            If not, give it a try, I cannot guarantee you though, that the outcome will be exactly as if you’d reduce the heat.

          • Niner — I’ve made your cheesecake so often, I didn’t even have to look it up! ;-)

            Last Fall I made it in Florida — my mother requested that I make a second one and leave it in her freezer — and over Christmas I made two in Paris. I even packed my roasting pan in my suitcase! They were a hit each time. Even though I don’t have an electric mixer (I know; shocking, right?) it’s really easy; you just have to “babysit” it for a while.

            If I were to give a bit of advice, it would be:

            (1) I use only 4/7 of your recipe, so 4 packages of Philly cream cheese works out perfectly for my 9-inch springform pan. (I do use the full amount of vanilla, though; it seems everyone skimps on vanilla, and there’s no reason to, aside from the cost. And I always use the best vanilla I can find.)

            (2) In a pinch, I have substituted full-fat Russian-style yogurt for sour cream, and the cheesecake comes out very well. Sour cream is still preferred, though, for the texture.

            (3) To reduce the overall sugar, I don’t add any sugar to the Graham cracker crumbs. They already have sugar in them!

            (4) Speaking of the crust, a couple of times mine has come out (partially) soggy. So now I TRIPLE-WRAP the springform pan in aluminum foil, and I am EXTRA CAREFUL when I pour the boiling water into the roasting pan, not to let any water get near the cake, and also not to pour more than 1/2 way up the springform pan.

            (5) Definitely do all the steps Niner recommends for the cooling process: reducing the heat by 25° F, then leaving the cake in the oven (heat turned off) for an hour with the door cracked, then waiting for it to come to room temperature, then letting it chill overnight in the fridge. This “cooling-off period” is as important to the success of the cheesecake as baking it!

            Thank you again, Niner, for your fabulous adaptation of Martha Stewart’s recipe. (I’ve watched the video of her making it, and it’s very cute. And with Zach Posen to boot! However, you’ve definitely improved her recipe, rendered it “classic”!)

    Ich wollte heute den Cheesecake backen. Habe allerdings kein Vanilleextrakt. Gibt es da eine Alternative? Ich habe Buttervanille-Aroma und eine Vanilleschote Zuhause. Ode doch lieber nochmal nach dem Extrakt gucken? Lg Flo

    • Hallo Flo, Vanillearoma klappt im Notfall auch – je nach dem wie viel du hast. Die Vanilleschote ist aber natürlich das Nonplusultra :-) du kannst ja mal abschmecken am Schluss, ob es noch Aroma benötigt.

        Leider ist der Boden ziemlich matschig geworden… Er sollte doch relativ trocken sein oder?
        Ich denke das Wasser an den Boden gekommen ist. Unten, in dem äußerem Rand der Springform stand nämlich Wasser.
        Naja nächstes mal muss ich besser abdichten oder ohne Wasserbad machen.

          (I’m writing in English, but you can use Google Translate if I my message is not clear.)

          I’ve made Niner’s cheesecake about a dozen times, and so I am a little bit of an expert. You CANNOT eliminate the “Wasserbad” — that is what keeps the cake from cracking. What you CAN do is to wrap the springform pan in THREE layers of aluminium foil. Wrap it tight, all the way up to the top of the pan! Also be *extremely* careful when you pour the boiling water into the roasting pan. (Remember, only to fill the roasting pan with water to a level halfway up the side of the springform pan

          Of my dozen times making this cheesecake, I only got a “soggy bottom” once. (Strangely, it was not my first time.) Since then I have used three layers of foil and have had no problems!

        • Hi Flo, wie Laura schon super beschrieben hat: Einfach mehrere Lagen Alufolie um die Springform wickeln und dann dürfte das Wasser nicht mehr durchdringen. Ist mir auch schon passiert, dass der Boden dann etwas matschig war, hat mich aber nicht so sehr gestört, es sieht dann nur nicht so wunderhübsch aus =)
          Freut mich sehr, dass er dir gelungen ist und ebenfalls geschmeckt hat. Das Wasserbad würde ich dennoch nie auslassen, aber das ist natürlich deine Entscheidung.

    man sollte sich vorher die Seite richtig angucken….dann hätte ich mir die Mühe sparen können, das komplette Rezept mit dem Google-Übersetzer zu übersetzen :-(
    Ich bin durch Zufall auf deine Seite geraten und bin total begeistert.
    Meine Käsekuchen oder Cheesecakes backe ich in der Regel auf Heißluft und immer mit niedriger Temperatur. Würde also in diesem Fall auf 160°C beginnen und dann auf 140°C runterschalten. Hast du damit Erfahrungen?
    Folgender Link ist mein Cheesecakerezept und ich habe für eine 26 cm Form 900 g Philadelphia genommen. Auf Grund der Menge, die du hier angibst….wäre es nicht besser, wenn ich eine mit 28 cm nehmen würde….falls ich keine Muffinförmchen füllen möchte?

      oh das sind dir wirklich keinerlei Grenzen gesetzt. Was sehr beliebt ist: Erdbeersaucen-Topping, entweder selbstgemacht oder gekauft (gute Qualität), oder Blaubeersauce, Schokosauce, Schlagsahne mit Karamellsauce..Früchte deiner Wahl. Da gibt es so viele Möglichkeiten.
      Ich plane weitere Cheesecake Rezepte, hoffe da wird dann was für dich dabei sein.

    ich wollte mich heute an dein Cheesecake Rezept wagen… Gerade habe ich festgestellt, dass ich meine Springform verliehen habe und deshalb keine Zuhause habe.
    Jetzt hab ich beschlossen einfach viele Kleine Törtchen wie auf dem Foto oben zu machen. Wieviele Törtchen würden es denn werden wenn ich die selbe Menge an Zutaten nehmen würde und könnte ich eventuell einfach die Hälfte nehmen?

    • Dieses Rezept schafft zu viel Käsekuchen Füllung (das ist, warum macht Niner Cupcakes mit den Resten). Am Freitag habe ich 5/7 des Rezepts in einer 28er. Alle meine Freunde haben es geliebt!

        • Yes, liebe Niner, but not everyone has time (or the desire) to make cupcakes, or has a smaller springform pan!

          I have figured out the problem, though. 4/7 of your recipe works perfectly for a 9″ springform pan. (Google tells me 9″ is only 22.86 cm!) Earlier this month I was in Florida, and I made two cheesecakes for a big birthday party (in addition to a huge carrot cake and two sets of brownies!)

          There I used 5/7 of your recipe for a 10″ cm springform pan (which is 25.4 cm).

          In each case I’m talking about the filling only, because I use the maximum amount of Graham Crackers that you suggest, but only a tiny bit of sugar.

          I guess your springform pans in Germany are much larger! Here in the U.S., I suppose only professionals bake with springform pans larger than 10″.

          ANYTIME I have made your cheesecake recipe, Niner, it has been a TREMENDOUS success. No cracking… and everyone loves it, and is so impresed! I follow all the chilling/cooling instructions faithfully!

          (Lately I’ve taken to serving it with a little fruit sauce that I’ve made with whatever fresh berry fruit I have on hand.)

    ich habe mich gestern endlich mal an das Cheeseckae Rezept gewagt. Hatte da immer sehr viel Respekt davor, aber ich muss sagen TOP. Das ist so super lecker und bei allen total gut angekommen!     Thank you for your DELICOUS cheesecake recipe. I made it this past weekend for my brother-in-law’s (BIL) birthday party. His favorite is cheesecake so I knew I had to try this recipe. Everyone RAVED about this cake and my BIL kept asking if everyone had tried the cheesecake. I used a 10″ spring form pan and did not have anything left over. It was a HUGE cake. It looked quite lovely. My niece placed 2 orders for this cake right away. It is the only cheesecake recipe I will ever use. Thank you, again, for an amazing recipe!!

    I was wondering….When I reduced temp to 325, I baked it for 38 minutes instead of 30 minutes and followed the rest of the directions. It did not brown on top like your picture and when I sliced it (room temp) it was on the creamier side. Do you think I should have left it in a wee bit longer to get a little brown?

      Great everyone loved it, thats the best part about baking to me, to make everyone happy.
      I do not think the cheecake has to be brown, sometimes it just happens within a couple of minutes, I like it when it gets a little brown though, but it is certainly not a must. Mostly cheesecakes are not really golden brown. Plus, oven temperatures vary, so baking time varies sometimes as well.

          Trotz Wasserbad gerissen, das ist merkwürdig. Die Temperatur von Backöfen variiert ja immer, sprich da kann bei deinem Ofen etwas anders sein, als bei meinem z.B.
          Kam der Riss bereits während des Backens oder beim Abkühlen während der Cake noch im Ofen war mit halboffener Ofentür?
          Ich kann es mir nicht wirklich erklären, ich hoffe, es passiert nicht noch einmal =/

    Danke für dieses hervorragende Rezept aus dem Cups und Spoon Land. Es stimmt absolut perfekt auf die europäischen Masse und meine 1.65 KG Philadelphia (Grosshandel) waren genau die richtige Menge. War mein erster Cheesecake und war ein kleiner Höhepunkt für die Gäste. Für das Wasserbad habe ich ein normales Kuchenblech genommen, wobei das Wasser dann nur bis zu 1/3 der Form abgedeckt hat. Als ich den Ofen ausmachte war da noch kein riss, am nächsten morgen dann ein ganz kleiner, aber vielleicht auch vom ablösen der Form (durchziehen erst vergessen, dann doch noch). Hat viel Spass gemacht, dieses Rezept zu testen. Nochmals danke für deine Arbeit damit. Einsame Spitze dieser Kuchen!

    dein Rezept klingt verlockend und ich möchte das unbedingt ausprobieren. Habe aber vorher noch eine Frage.

    Bei Punkt 12 hast du geschrieben, dass man die Springform in einen Bräter mit Wasser stellen soll, damit der Cheesecake keine unschönen Risse bekommt. Aber kann man es auch ohne diesen Bräter und Wasser machen? Der Geschmack bleibt sicher der selbe, oder?

  72. Bin gerade dabei ihn zu backen (der Cheesecake genießt im Moment kuschelige 160°C). Da ich leider keinen Bräter hatte, der groß genug ist, hab ich einen Bräter mit Wasser unter die Springform gestellt, was soll ich sagen, er schaut perfekt aus weder Dellen noch Risse vorhanden.

    Genau das richtige Verwöhnprogramm, um den lieben Kollegen den Montagmorgen zu versüßen!

    habe deinen cheesecake grade nachgebacken und einige der vorigen kommentare hatten wirklich recht… hätte ich die vollen 1500 gr gemacht mit 5 eiern hätte ich bei eienr standart sprinform von 26 cm ZWEI CHEESECAKES machen können!! hatte es vorsorglich schonmal runtergeschraubt um 1/5, also 1200 gr und 4 eier… aber leider hab ich immernoch einiges an teig übrig :( sehr schade. es reichen wirklich 3/5 aller angaben, also 900 gr frischkäse und 3 eier etc etc… ach und für 20 hobbits von brandt braucht man ca 150 gr geschmolzene butter, wenn man den boden sehr bröselig macht :) sonst bindets nicht. und ich empfehle grobes meersalz für den boden, gibt dem ganzen einen caramel beurre salé geschmack :D ah und zitronensaft und zitronenschale!!! das gibt einen richtig guten ZING ;) UND für alle deutschen: wenn man keinen vanilleextrakt hat kann man auch gut 30 gr zucker abnehmen und statt desses drei tütchen vanillezucker verwenden :) mal sehen, was am ende rauskommt in meinem mikrowellen-ofen ;D Merci fürs grundrezept!!

    Ich hätte eine Frage zum Rezept.
    Im Punkt 14 schreibst du, dass der Cheesecake nun noch 1 Std. im Backrohr bei halboffener Tür bleibt.
    Muss der Ofen noch heizen oder schon abschalten?!
    Hab ihn jetzt schon gebacken u. den Ofen dann nach den 1 1/4 Std. ausgeschaltet u. den Cheesecake noch 1 Std. bei halboffener Tür drinnen lassen.
    Er schaut schon verdammt lecker aus…..mmmmmhhh

  76. ReamE I’ve been making cheesecake for a little while and yours intrigued me. My grandfather’s cheesecake sold for over $25 a piece in the 50’s. I ran across a slip of paper long afterhis death with just the ingredients, no measurements. Then lost it in a move sadly. I can say that a combination of this recipe and remembering his secret additions I have finally come to as close to his as I can get. Next time I’ll be using fresh handmade cream cheese as he did. Thank you for helping me recreate this.

    Das Rezept klingt suuper. Ich hab allerdings etwas nicht ganz verstanden, der Cheesecake geht für 45 Minuten bei 180 Grad und dann für 30 Minuten bei 160 Grad in den Backofen.
    Muss ich dann den Cheesecake halboffen bei 160 Grad oder abgeschalten im Backofen lassen?

  81. Hey, I just have to say that it turned out to be an amazing cheesecake. As most of the others already said, I also tried a bunch of different recipes and this was by far the best New York Cheesecake I’ve ever made. Indeed it was a bit too much of the cream part for 26er pan, but like Irene I just poured the rest(without the crust) into 8 lil forms. They also turned out great. I served it with a cranberry-strawberry sauce.
    They all loved it. Thanks for this recipe :)

            hab mit der genau eine 26er und eine 18er Form voll gekriegt, es passte wirklich auf das Gramm genau ;-)
            Wie du gesagt hast, hab ich beim Backen einfach ein paar mal öfter in Ofen geschaut und musste nur die Backzeit bei 160° etwas kürzer halten.
            Zum Ergebnis: Wahnsinn!!! Perfekte Konsistenz, super Geschmack!!

    Ich wollte mich ganz herzlich für das tolle Rezept bedanken – es schmeckt köstlich!
    Mit 3 Schichten Alufolie hat das Abdichten perfekt geklappt. Ich hab übrigens statt Vanilleextrakt 2 Vanilleschoten genommen und statt 9 nur 6 Stück Philadelphia (und die Füll-Mengen entsprechend angepasst) – alles wunderbar! Diesen Kuchen werde ich öfters backen. :-)
    PS: Dein Blog ist zuckersüss, vielleicht schaue ich ab und zu mal vorbei.

  85. Hello:) I am so excited to attempt your cheesecake recipe tonight. It sounds as if you have found THE ONE!

    I do have a few suggestions for others based on my own life-long cheesecake research.
    1. Instead of using foil for your water bath, use a crockpot liner (or large oven-safe plastic bag meant for roasting a turkey). It never leaks and you don’t have to worry about your crust becoming soggy.
    2. Use plain dental floss to cut your cheesecake instead of a knife. Just wind it tightly and keep a firm grip while slicing. It leaves no crumb residue!

    As a born and raised New Yorker, a true NY style cheesecake has NO CRUST…so that could be why folks are asking to make it without one:) I myself prefer a crust to contrast with the creamy texture, so I will be using your recipe plus a pinch of cinnamon! Can’t wait to report back!

    mein Freund liebt New York Cheesecake und hat in einem Cafe seinen absoluten Lieblingscheesecake gefunden. Leider konnten wir dem Inhaber das Rezept nicht entlocken. Ich probiere es jetzt also mal mit deinem Rezept und bin sehr optimistisch :)
    Jetzt ist mir aber etwas unklar… nachdem du die Hitze reduzierst und der Kuchen noch bei 160° im Ofen ist und dann bei halboffener Ofentür weiterbacken soll…soll da die Hitze komplett runter oder weiterhin bei 160°?
    Und für welche Springformgröße ist das Rezept?
    Bestimmt hat das schon jemand gefragt, aber das sind soooooo viele Kommentare :D

    aber da er ja nicht eine ganze torte essen kann, habe ich das rezept durch 9 geteilt und es hat ein herziges herzchen gegeben ( hab so eine speingform)
    hab mich exakt an alles gehalten, aber als ich probiert habe war es sehr sauer? könnte vielleicht dran liegen dass meine saure sahne sehr sauer war :D hab auf jedenfall ein bisschen zucker nachgestreuselt. ja jetzt… hab mich auch ans wasserbad gehalten.. leider sieht die oberfläche schrecklich aus. es hat mir das herz fast zerrissen :/ tausende von rissen aber ich kanns mir nicht erklären.. bin einfach nicht zum backen geboren :(

  92. Hi Niner, I found your recipe by Googling. I needed to bring desserts for Thanksgiving at my sister-in-law’s house yesterday. I followed your instructions to the “T” and it came out absolutely perfect! Yum! I loved it and so did everyone. Many their want your recipe so I’m going to share. Unreal how fluffy this was! A kicker is that some of her family is gluten intolerant so, I needed to make my cake gluten free. It was easy, just use gluten free flour in the cake recipe, and use gluten free graham crackers for the crust. Oh, yes, it also turned out crack free! This was as good if not better than any that I’ve bought in any fine restaurant! I saw that you and many people had extra cake mix left. Not I, it filled my locking pan right to the top. Thank you for sharing this. I’ll be back to see other recipes of yours.

Even better than the best bakeries & restaurants. I have requests to make this again for birthdays, etc. I followed the directions exactly as printed. I did notice that it tasted it’s best about 36-48 hours after setting in the refrigerator. Thank you again!

      As I have remarked elsewhere on this blog, I have amended Niner’s recipe to reduce it by 4/7 (except for the crust). I have made Niner’s cheesecake this way about 15 times now, and every time it receives RAVE reviews! Here is my amended version:

      For the Crust:
      • 11-14 Graham Crackers
      • 6 tablespoons melted butter
      • butter for pan (important: room temperature)
      • pinch of salt
      [the graham crackers are already sweet, and don’t need extra sugar IMHO]

      For the Cheesecake:
      • 4 eight-ounce packages Philadelphia cream cheese (important: room temperature)
      • 1 1/3 cups (superfine) sugar
      • 1/4 cup all-purpose (or pastry) flour
      • 1/2 cup sour cream (important: room temperature)
      • 1 1/2 teaspoons pure vanilla extract
      • 3 large eggs (important: room temperature)

        • Greetings, Niner, from Florida, where I just made three of your cheesecakes in the past 10 days! (There’s one in the fridge right now!)

          (I was only going to make two, but I had bought some key-lime infused sugar, and so I substituted it for half the sugar in the recipe. It was a MISTAKE. The key lime took over from the natural taste of the cheesecake. Moreover, there is blue and yellow dye in the mix, and the green cheesecake just looked weird!

          Two things I’d like to note:

          (1) I was in a hurry, and accidentally poured an entire stick — 8 T — of (organic) melted unsalted butter into the graham cracker mix. However, the result was delicious! Since I always use the upper limit of graham crackers (14), I now believe adjusting the butter upwards is a good idea, as 14 is 25% more than 11!

          (2) We couldn’t find the entire springform pan in my mother’s house, and so I went to the grocery store to buy one. Although they have a lot of cooking supplies, they didn’t have a springform pan! So I bought a deep ceramic pie dish (identical to the one in this photo http://www.iheartpublix.com/wp-content/uploads/2013/05/ham-spinach-quiche-copy-21.jpg), and lined it with two layers (crosswise) of aluminum foil, buttered on both sides, with 2-4 inches of foil sticking out of the top.

          The result was perfect! I didn’t have to worry about water seeping into the springform pan, and it pulled out easily, using the excess aluminum foil as “handles”.

          Let me know what you think of my amended recipe! HAPPY NEW YEAR!

          P.S. Note that I did not reduce the vanilla. I always add more vanilla than ANY recipe requires… and I buy the highest quality vanilla I can find.

      I’ve made Niner’s fabulous cheesecake over 20 times, and I personally would NOT OMIT THE SOUR CREAM! The cheesecake would lose its special “zing” without it.

      Twice, out of necessity, I’ve used STRAINED PLAIN YOGURT instead (by “strained” I mean that I put it in cheesecloth for half an hour or so, to get rid of the excess moisture). The resulting cake still had a “zing,” but not quite the same texture as with sour cream.

      Now writing this is making me yearn for a piece of cheesecake. I think I’ll make another on Sunday….

      That was my thought, too, which is why I reduced Niner’s recipe by 4/7. (If you read the labels on the Philly cream cheese, there is still PLENTY of fat in 4 packages!)

  100. Thank you for sharing your recipe. I made this for my loved one’s birthday, and it was spectacularly delicious. No cracks, creamy, luscious. As I am in Australia, I used 6x250g packets of philadelphia cream cheese, baked at 175degrees celcius, then 165degrees celcius – for a light caramel top.

    We look forward celebrating many more special occasions with this cheesecake in the years to come!

      die mini Cheesecakes brauchen deutlich weniger Minuten im Ofen zu verweilen :)
      Leider hab ich keine Minutenangaben – bitte stets dabei bleiben, sobald sie zu braun werden, Ofen aus und die Cakes noch bei offener Ofentür im Ofen lassen (wie beschrieben).

      the browned top can appear within minutes, that’s why I always check the cake and never leave it alone =)
      A brownish top isn’t so bad though, if it turned brown TOO quickly, decrease the temperature a little, your oven tends to get hotter than most then.

    Meine Frage lautet , du hast auf einem Foto auch ein muffinblech mit keksboden bedeckt. Halbierst du dann dein Rezept , für 12 muffins oder nimmst du das Rezept 1 zu1. Aber ich glaube das wäre zu viel, oder? Und hast du das Rezept auch schon mal in einer 12er Form gebacken oder war das nur fürs Foto als andere Option ? Was würde sich noch ändern am Rezept , wenn du es selber schon in der muffinsförmchen gebacken hast.

      Ich mache Cupcakes etc. aus dem Rest des Teiges, da es wirklich sehr viel ist. Ich muss das ganze nochmal überarbeiten, sodass nichts übrig bleibt – da haben viele viele meiner Leser recht, wenn man sich die Mühe nicht mehr machen will um noch Cupcakes zu backen, ist es zu schade, den übrigen Teig wegzuschmeißen.
      Ich habe den Cake schon in verschiedenen Formen gebacken. Bei Cupcakes verkürzt sich natürlich die Backzeit, also heißt es: Den Backofen im Auge behalten :)

  106. Adorei sua receita, mas como sou do Brasil tive que fazer algumas adaptações. Além de traduzir os ingredientes, ainda tive que converter as medidas para as que usamos no Brasil. Libras e onças para gramas. Polegadas para centímetros. Temperatura do forno de fahrenheit (ºF) para celsius (ºC). E é claro, achar um substituto para o “Graham Cracker”. No final acho que consegui.       I just went to your blog and saw that you substituted “biscoito cream cracker integral” for the graham crackers! A clever move, but wow — graham crackers are SO different from cream crackers! I might add a little molasses or honey to your cream crackers to make up the difference.

      P.S. You’re lucky to be able to purchase cream cheese in Brazil. I’ve made this cheesecake in Paris and I’ve had to bring my own cream cheese from the States to do it properly (the graham crackers as well). The only kind of cream cheese you can buy there is “spreadable,” which doesn’t work as well as the real “Philadelphia brick.”

    Vielleicht magst du dir das Ergebnis mal anschauen, der NY Cheesecak war auf jeden Fall super lecker!!! Hab die Mengen bei mir noch etwas angepasst, denn beim ersten Backen nach deinem Rezept hatte ich noch soviel überzählige Cheesecake-Masse, das ich noch geniale Cheesecake-Cupcakes gemacht habe! Meine Arbeitskollegen haben sich gefreut :D Hab dafür einfach einen Hobbits in ein Papierförmchen und obendrauf dann etwas von der super genialen Füllung!

  109. Hello Niner! Got a lot of positive feedback today! Yesterday, I had my husband’s two thumbs up and today I got my officemates’! :) It was an awesome feeling because it was my first time to bake a cheesecake — always been intimidated by cheesecakes because it can be quite technical, I have read tons about the crack, about the top burning…etc. With the batter, I was able to bake 1 9-inch cake and two 4-inch ones. All three had no cracks! That waterbath really worked!

    I baked the 9-inch according to what you have on here and the two 4-inch cakes, I baked it at 350 for 30 mins then 325 for 15 minutes.

    Thank you again! It is such a good recipe — one I will make again and again for special occasions! :)

  111. Hallo, habe heute den Cheescake nachgebacken und alles genau nach Anleitung gemacht. Leider ist doch Wasser in die Springform gelangt und der Kuchen ist auch gerissen. Habe ihn erstmal in den Kühlschrank gestellt, vielleicht schmeckt er ja trotzdem.

    • Hi Stephanie, das ist aber schade, tut mir leid. Hast du zu wenig Alufolie benutzt? Da muss ja irgendwo ein Leck gewesen sein – dann nächstes Mal (sofern er dir schmeckt) eine Lage mehr Folie. Vielleicht ist dein Ofen generell heißer, anders kann ich mir den Riss nicht erklären.

        Ich hatte zwei schichten Folie rum gewickelt. Nächstes mal also mehr. Würde es auch funktionieren eine Schüssel mit Wasser neben die Springform zu stellen?
        Habe den Kuchen trotzdem über Nacht in den Kühlschrank gestellt und da ist der Boden wieder fester geworden. Und wie schon alle hier vor mir geschrieben haben, ist er wirklich sehr sehr lecker.

I used this recipe last night as my first ever attempt at cheesecake, and it was almost a perfect success (I say ‘almost’ because I think I did something wrong with the base, but it still tasted good)! I absolutely adore Starbucks cheesecake, so when I saw you mention it, I knew I had to try this one first. :) I used Laura M’s reduced portions to make a 9″/23cm cake, and the batter amount was perfect!

    I just wanted to say thank you for this excellent recipe; I’ll definitely be making it again. My friends in a ladies’ group have insisted I make it for our next meeting, in fact! Hehe.

    leider fällt mir der kuchen immer wieder zusammen, bzw er senkt sich nach dem backen immer extrem runter.
    ich halte mich exakt an die rezeptangaben.
    hast du vielleicht einen tipp, dass sich der kuchen nicht senkt?

      das ist sehr eigenartig – vielleicht ist er zu weit oben im Ofen oder dieser ist einfach zu heiß und wenn du ihn rausnimmst, ist der zu hohe Temperaturunterschied der Grund dafür, dass der Kuchen zusammenfällt?
      Mir fällt leider nicht mehr ein. Vielleicht die Temperatur ein wenig runterdrehen?

  118. This is the BEST! I made it for our family birthday party yesterday. I’m known as the family baker. My brother asked me twice if I made this cheesecake, as if he didn’t believe me! He said it was probably the best cheesecake he’s ever had. I have made cheesecake before, different flavors, different difficulties etc. My daughter requested cheesecake. I admit that I’ve bought them from Costco in the past when I was pinched for time. But I thought I’d go for more of the New York style since I had the time. I got a recipe from a lady I knew in New York. A sure thing, right? But I lost the recipe. So I did research and read reviews. A LOT. This recipe seemed to have the right balance of everything the other reviews said a cheesecake recipe should have our should not have, (water bath, eggs, etc) although I did add a capful of lemon juice.

    I opted for the whole big 7 packages recipe. I thought if I’m going to go through all the trouble, I’d like the extra to freeze or share. I made the cracker crumb crust using 14 crackers and 8 tbsp of butter. (Read that in one of the comments here.) I put it in a 9″ pan. I don’t have a 10″. Then I made another batch of crumbs for the leftover cheesecake filling. I used the Pampered Chef mini pie and mini tart pans. They both have removable bottoms. I had enough filling and crumbs to make 6 of each. I added them to the oven when I reduced the temp to bake the big one for the last 30 minutes. I did not wrap the small ones in foil or water bath them. Everything was PERFECT. There was no cracking. There wasn’t much browning though either, which was fine because they were done. I followed your recipe for times and temps. Also I left them in the oven with the door cracked for an hour and refrigerated them overnight.

    I’m saving this recipe on every site and book marking it on every device. I will never use another recipe. Thank you!

    • Stacy, it was such fun to read your post. As it happens, I just was visiting my mother in Florida for two weeks, and ended up the cheesecake (my 4-package version) three times. It was “all cheesecake, all the time,” and everyone was blown away, as usual, by its goodness!

      A word about browning: in my own gas oven, the tops hardly get brown at all, but they do in my mother’s electric oven. Either way, they taste terrific!

      Another note that might help some people out: my mother doesn’t have a springform pan, and so I devised another method I’ve used 4 times now: a pie plate (http://www.goodcook.com/images/04412_A_520.jpg) that I line with a two long overhangs of aluminum foil (to pull it out afterwards) that I bathe in a large skillet (she doesn’t have a roasting pan either). It worked perfectly, and I didn’t have to worry about water getting into the crust!

      The only downside is that width of the pie plate is less at the bottom than at the top, and so for cheesecakes #2 and #3 I had to reduce the crust from 14 crackers to 11.

      P.S. I think that if your sour cream is sufficiently tangy, you won’t need the lemon juice (especially from a bottle).

    Endlich möchte ich dein tolles Rezept auch mal ausprobieren, und zwar für meinen Geburtstag.
    Als ich eben alles einkaufen wollte, habe ich festgestellt, dass der Philadelphia (sowie auch alle anderen Frischkäse) Speisesalz enthalten. IST DAS RICHTIG SO??? Schmeckt der Kuchen dann nicht zu salzig?
    Ich hoffe, du hast Zeit, mir schnell zu antworten, es ist mein absoluter Wunsch, ihn zur Geburtstgsfeier aufzutischen.

  120. Hi, 1000 Dank für das Rezept. Ich will ihn demnächst zum Geburtstag backen, gestern gab es eine 18 cm Probeversion. Da ich kein Philadelphia hatte, habe ich Mascarpone genommen, was wahnsinnig gut funktioniert hat (zum Glück!). Falls also Jemand mal eine Alternative sucht. Um es säuerlich zu bekommen, habe ich auf 500g Mascarpone 12 TL Zitrone gegeben, was ich ziemlich perfekt finde.

    Meine Frage: meinst Du mit Sauerrahm saure Sahne? Die mit 10% Fett? Oder Soure Cream? Oder Schmand?

    Ich habe saure Sahne genommen, mehr als von Dir angegeben, weil ich nur ein Paket Mascarpone hatte, es hat auch funktioniert, der Kuchen ist der Hammer! Wahnsinnig cremig, perfekt gebräunt, null eingerissen, nicht eingefallen, echt irre. Und obwohl die Alufolie innen feucht war, warum auch immer, es konnte nichts reinlaufen, ist der Boden super knusprig. Ich finde ihn übrigens ohne extra Zucker sehr gut. Meinst Du, er karamellisiert besser, wenn man Zucker rangibt, oder ist das nur für den süssen, amerikanischen Geschmack? Das Vorbacken hatte ich übrigens überlesen … Es hat nichts geschadet. Da die Geburtstagsversion perfekt werden soll, würde ich halt gerne das mit der sauren Sahne noch wissen.heisst ja überall anders …

    Hast Du ihn mal mit fettreduziertem FK gebacken? Das würde mich ja interessieren, ob er trotzdem so toll wird.

  121. Vielen Dank für das Rezept. Habe es gestern für meine Familie gemacht und eben ein Stück zum Frühstück probiert. Von der Konsistenz und der Optik her perfekt, aber uns hat es allen den Mund zusammen gezogen, weil der Kuchen viel zu süß ist. Mehr als ein paar Gabeln können wir nicht davon essen. Ich habe flüssiges Vanille Aroma benutzt, vielleicht liegt es auch daran?

      vielen Dank für das Feedback. Hast du richtiges Vanilleextrakt benutzt oder normales Vanillearoma? Da ist ein großer Unterschied und das könnte der Grund sein, denn sonst ist der Kuchen nicht “zu” süß, wobei das immer Geschmackssache ist :-)

    • Either the 9″ or 10″ would work fine. (The 9″ pan will make for a taller cheesecake, and you could use slightly more graham crackers if you should purchase a 10″ pan.)

    Ich habe dieses Jahr zum ersten Mal NYCheesecake probiert und habe mich verliebt. Für Silvester wollte ich unbedingt zum Nachtisch selbst diesen leckeren Kuchen backen. Mit deinem Rezept habe ich gehofft ein tolles Rezept gefunden zu haben, welches dem von mir probierten Cheesecake nahekommt und ich muss sagen: Wow, ich bin happy. Ich habe nur eine kleine Springform gebacken, die Hälfte habe ich Silvester und Neujahr allein verdrückt. Hihi. Ich habe deinem Rezept lediglich eine gute Prise Salz zugefügt. Da ich diesen Kuchen etwas kompakter mag, werde ich den Frischkäse nächstes Mal nicht zu arg schlagen. Aber geschmacklich ist dein Rezept echt top. Vielen Dank dafür.

    Ich hab 2 Becher Saure Sahne a 150g genommen, vielleicht war das mein Fehler?
    Und alles (Boden und Kuchen wird auf Ober und Unterhitze gebacken) richtig?

    Ich verfolge deinen Blog schon länger und bin gestern, nachdem ich nach einem original American Cheesecake Rezept gesucht habe, wieder einmal über dich und deine Backkünste gestolpert…. Habe den Kuchen direkt nachgebacken… und er ist soooooooooooooooo unendlich lecker! Ich habe noch nie so einen leckeren Käsekuchen gegessen! Habe selbst etwas weniger Frischkäse und Zucker genommen um die Masse zu reduzieren, dafür habe ich noch Erdbeerswirls gemacht. Masse hat die Form sehr gut ausgefüllt und ist durch die Isoliermethode nicht zu sehr aufgegangen/ gerissen.
    Einfach super!

  133. Hi, I found this recipe and thought it looked spot on, I just finished making it and it looks perfect! Only one thing, about halfway through the baking it developed a mound or bulge in the bottom left corner of the pan, then that bulge cracked! Any idea why that happened, I put it in a Bain Marie and instructed. Maybe the oven was too hot in that corner? Let me know what you think, thanks!

      die Backzeit wird sich ein wenig reduzieren, leider kann ich dir aber keine genauen Angaben geben. Man muss den Kuchen stets beobachten (nicht das er oben verbrennt etc.).
      Wenn ich die Cupcakes z.B. mache, beobachte ich diese und bevor sie zu braun werden, nehme ich sie raus. Mit einer 20er Springform ist es sicherlich ähnlich. Wobei die Cupcakes nicht so lange im Ofen bleiben müssen.
      Tut mir leid, dass ich dir keine genaue Antwort geben kann. Liebste Grüße und einen nicen Tag Dir.

  140. Hi! Thank you so much for this recipe! I followed the ingredients from Laura M. precisely along with your directions. They could not have been better and it turned out amazing! This is definitely a keeper. I did the water bath and baked mine at 325 degrees for 45 minutes. I then cut the oven off and left the cake in the oven with the door closed. I took it out after an hour, and then put an inverted plate over the top of the pan. Once it was totally cooled, I put in the fridge, uncovered, and took it out. Yum yum!

    Bei welcher Temperatur wird er denn für 45 Minuten gebacken? Auf 160 Grad reduzieren… Und davor?

    Das Rezept ist genial! Vielen Dank! Geschmacklich war dieser Kuchen einfach unschlagbar. Doch irgendwie war die Konsistenz nicht ganz richtig. Der Boden war ziemlich wässrig. Als ich den Kuchen aus der Alufolie nahm war diese voll mit Flüssigkeit. Kann das eventuell an einem zu dünnen Boden mit viel Butter gelegen haben?

  143. I just made this and it is perfect. :) The sour cream really gives it a nice tangy flavor. Would adding lemon juice without omitting the sour cream cause the cake to become too sour? I think the lemon flavor would go really well with a blueberry compote, but I’m afraid of destroying perfection.

  144. Liebe Niner, habe den Kuchen gestern für den Geburtstag meines Mannes gebacken … er hat noch nicht die Kerzen ausgeblasen aber wir sind gespannt, wie er schmeckt. Mir ist aufgefallen, dass Du zwar eine Prise Salz in den Ingredients hast aber danach im Rezept sie nicht mehr aufgeführt sind … ich habe sie einfach zum Bodenteig dazugefügt. Und muss der Backofen immer noch an sein (160°), wenn er 1 Stunde ruht oder stellt man den Backofen aus bei halboffener Tür? Danke für Deine Feedback, vielleicht hast Du diese Frage schon beantwortet …

      das Salz hast du ganz richtig angewendet =) Es kommt tatsächlich in den Boden, danke für den Hinweis. Der Backofen muss nicht mehr an sein, nein, der Kuchen soll bloß bei halboffener Tür nachbacken :)

  146. Hi, About over 30 years ago, my best friend’s grandmother(who belonged to the symphony) gave me the recipe for the Ritz’s Cheesecake. She got it while on her honeymoon, in the 30’s, in New York City. This is that recipe!! The only difference is that instead of graham crackers, they used zweiback, baby toast. It really makes a difference.
    I love trying out all sorts of recipes, and usually check out cheesecake recipes to compare against the standard.
    I was excited to see this one. Keep on with all your awesomeness!!

    da mein Mann morgen Geburtstag hat und wir nun schon zweimal in New York waren, ohne einen Cheesecake zu probieren möchte ich ihm eine Freude mit einem selbsgebackenen NY Cheesecake machen. Über Google bin ich auf dein tolles Rezept gestoßen und habe heute gleich gebacken.

    Leider hat der Cheesecake trotz Wasserbad Risse bekommen. Ich habe versucht die gesamte Füllung in meine 28er Springform zu bekommen. Ein kleiner Rest ist übrig geblieben (Springform war dann randvoll). Kann es sein, dass mein Kuchen deshalb Risse bekommen hat?

    Die Risse sind erst erschienen als ich nach 45 Min. Backzeit die Hitze reduziert hatte und dann nach ca. 5-15 Min. Nochmal in den Ofen geschaut habe.

Hello…So I am trying this today for my brothers birthday tomorrow and I have looked through the comments and can’t seem to figure out if the tempratures are fan bake or normal bake (I hope I don’t sound too dopey here!) I am in Australia so I read it’s about 165oC but is that in a fan forced oven?? I really don’t want to screw it up because I over or under cooked it!! I’m already worried because my oven is not the best, the grill is stuffed and it seems to cook the left side and the back well but not the front right side…I usually have to turn around a cake 3/4 into the cooking time so it’s baked even!! I won’t do that here, I will just follow the instructions and just hope for the best where my temperamental oven is concerned…. I know I am posting last min sorry! Thanks for the recipe

    Habe das Rezept gestern ausprobiert. Es ist super angekommen!
    Danke, danach habe ich lange gesucht!

    Habe eine 20er Springform und 2 Muffinbleche a 12 Stück aus dem Rezept gemacht.
    Zu den Muffins, die habe ich 15min auf 180 Grad im Wasser Bad und dann noch 10min auf 160 Grad ohne Wasser Bad gebacken (keine Risse, alle perfekt). Sie waren genauso toll wie der Kuchen nach dem Rezept. Meine Kollegen haben die Muffins innerhalb von 2Stunden verdrückt und wollten das Rezept ????

    ich bin schon bevor ich es probiert habe begeistert von deinem Rezept!

    Da ich ein Cheesecakefan bin, macht es mir nichts aus, wenn es “zu viel” Cheesecake Masse ist. Aber ich weiß trotzdem gerne woran ich bin^^. Also ich habe vor einen 26er Form zu verwenden. Ich habe schon gelesen, dass die Angaben für den Boden “stimmen” und genau für die Form ausreichen. Ich habe vor die restliche Menge in Muffins zu verwandeln. Ich habe Silikonförmchen, die ich auch in ein Wasserbad stellen kann. Ich habe oben auf einem deiner Bilder gesehen, dass du scheinbar auch die überschüssige Masse zu Muffins gemacht hast. Daher meine Frage: Welche Backzeiten hast du da verwendet (also wie lange bei bei 180°C, wie lange anschließend bei 160°C und wie lange im ausgeschalteten Ofen)?

    Ich freue mich schon darauf, das Rezept auszuprobieren! :)

    Natürlich musste ich ihn selber mal Nachbacken. Dies habe ich gestern Abend getan und Heute Morgen direkt Probiert.Der Geschmack ist echt Bombe.
    Leider ist etwas Wasser in die Springform gelang. Sodass der Boden etwas weicher geworden ist.Werde das nächste mal ohne Wasserbad probieren und etwas weniger Masse Anfertigen. Ich habe den Kuchen lieber etwas flacher und nicht so hoch.

    PS:Was kann ich der Masse zufügen um das die Creme nach dem Backen etwas Fluffiger wird und nicht so kompakt?

  161. Hallo, ich habe den Kuchen gestern gebacken und habe noch eine Frage bevor ich ihn anschneide. Sollte der Kuchen geschnitten werden, wenn er aus dem Kühlschrank kommt oder bei Zimmertemperatur.

  163. I just made this for the 2nd time! This time I wasn’t home and didn’t have access to a mixer so with my wooden spoon the “beat until fluffy” step didn’t really happen, but it looks like it still turned out great! For my gluten free friends I sub 1/4 cup of cornstarch for the flour and use gluten free cookies for the crust. Both times I’ve had ghee pool out of the crust and into the foil, but cracking the pan to allow it to run out as it cools seems to work just fine and my crusts have been crispy and awesome!

    danke für das tolle Rezept, der Kuchen ist in der Tat nahe an der Perfektion.
    Schön wäre, wenn Du die erste Backtemperatur noch nachtragen könntest, ich habe meine ersten Versuch leider ziemlich versemmelt, indem ich den Ofen zu heiß gemacht habe (200°C) und die Oberfläche zu braun wurde.
    Die Menge an Käsecreme ist definitiv zu viel mit 9 Packungen Philadelphia – zumindest für eine Standard 26cm Springform. 8 Packungen reichen für wagemutige Bäcker (läuft es über oder nicht?), wer kein Risiko eingehen möchte, kommt auch mit 7 aus. Dann würde ich auch ein Ei weniger nehmen, die Creme darf ruhig etwas leichter werden.
    Der Boden aus Hobbit-Keksen ist übrigens der Hammer, die wurden ja wohl nur für diesen Zweck erfunden :-)
